Proof that I'm not that lazy! This is a proper, Chinese recipe taught by a Hokkien dad to his Hokkien daughter. So it's (culturally) authentic!
Ingredients:
- Yellow egg noodle
- White rice noodle
(Proportion of egg noodle: rice noodle can be as you like, but I prefer between 2:1 to 1:1)
- Beansprouts (optional; not too much!)
- Prawns
- Egg (1 egg per serving)
- Garlic
- Light soya sauce
- Pepper
- Oil
- Water/ Prawn stock (made along the way)
Instructions:
1. If your prawns are raw, good for you! Boil them until cooked. Then separate the prawns from their heads and shells, but do not throw the prawn stock (the water) away!
2. Beat the egg, then add light sauce (a tablespoon) and pepper (2 shakes), beat it again.
3. Wash your egg noodle and rice noodle, and strain them, then leave them at one side.
4. Wash beansprouts and strain them too.
5. Start the fire, put your pan over it, add oil, then lower the fire again before adding garlic when the pan is nice and hot.
6. Stir-fry the garlic a bit, and when it turns a little brown, add the noodles and the beansprouts. Mix them well. Pour about 1.5 tablespoons of light sauce, and pepper (3 shakes), and mix again.
7. Add prawn stock [without heads or shells] OR water. Just pour enough to drench the noodles a bit, and so you don't see your noodles swimming in your pan. (If you put too much, just cook the noodles longer so the water evaporates.)
8. Bring it back on high heat. When the noodles look moist and at a bit cooked, add the egg! just pour it over the top of the noodles, and mix the noodles around.
9. When the egg looks cooked, add the prawns and stir them around.
10. Taste your prawn noodles before taking them off the pan! If they are not sufficiently salty, add more pepper and light sauce. Remember to mix well!
Incidentally, how much noodles you want to eat is up to you. I am really bad at estimating this. But my friend says one person eats half a packet of noodles, the Tesco-sized ones. So I'd say maybe they same volume as 3 tennis balls. o.O
Although this recipe looks troublesome, it actually cooks really fast, especially when your prawns come cooked, beheaded, shelled in the supermarket! I'd say 10mins tops?

ReplyDeleteIs there any prawn stock that can be used as a substitute if prawn comes cooked? Or will water do fine?
