Fried rice with dwarf beans, bacon, onions and mushrooms.
All-time favourite. An excellent choice for clearing up all the leftover food as it exhibits great flexibility :)
Ingredients:
1) Cooked rice! Preferably overnight rice
2) eggs (approx 1 Med egg per serving)
3) meat (can be minced meat, bacon, pieces of chicken. Cooked or uncooked.)
4) some vege: for a healthier meal!
Today, I decided to use up some of my uncooked bacon that I left in the freezer for a decent amount of time. for my veges, i used dwarf beans - chopped into small pieces, and sliced mushrooms. I will highly recommend lettuce - cut into long slices - as it provides that extra crunch in the fried rice! :)
Steps:
1)Heat 1-2 tbsp of cooking oil (~1.5 tbsp per serving) in a rather large pan on high heat
2)Cook garlic till brown, then onions till soften (i like my onions cut into 8ths.. make sure that each piece separates)
3)Add veg
4) add meat (Make sure the juice runs try!)
5) Add generous portion of salt (about 1-2 pinches per serving)and pepper to taste
6) add cooked rice
7) add well-beaten eggs into rice and mix well! serve when ready

p.s. My fried rice looked darker than normal because i did not let the juices from the mushrooms and bacon run dry before adding rice! also, for more eggy and yellow fried rice, add more eggs. However, more eggs will also make the fried rice soggier. Fry on higher heat for drier rice (I am terrible at heat control, and pan was too cold when i added eggs - soggy rice as a result.) High heat recommended! stove on 5 or 6 (out of 6)!
